Healthy Happy Hour

There is so much to say when you are ceaselessly promoting the benefits of health and fitness, but there are also so many places to say.   I post to my friends on Facebook, am gathering a following on Twitter and use the Beachbody Message Boards to support my members and coaches.

This afternoon, I am hosting the grand opening of the Beachbody Cafe Albuquerque, featuring our “Healthy Happy Hour”.   We are serving “drinks” in the form of the two flavors of Shakeology plus some of the recipes that are becoming so popular with additions like bananas, peanut butter, fruit, etc.

To go along with “drinks” we are going to have Tony Horton’s Vegan Chocolate Chip Cookies.   As most of you know already, Tony is creator of P90X.   What most people don’t know is that he is also a vegan.   Here’s his recipe (minus the cardamom – cost too much for just a pinch)

Tony’s Favorite Vegan Cardamom Chocolate Chip Cookies

2 c. Spelt Flour
3/4 c. Rolled Oats
1/2 c. chopped Walnuts
1 c. Grain Sweetened Chocolate Chips
1/2 tsp. Sea Salt
3/4 tsp. Baking soda
1/8 tsp Cinnamon
Pinch Ground Cardamom
2/3 c. Agave Nectar
2/3 c. Grapeseed Oil
2 TBL Water or Almond Milk
1 tsp. Vanilla Extract

Preheat Oven to 350 degrees. Place dry ingredients in a large mixing bowl and stir to combine. Combine wet ingredients in a medium bowl and whisk together. Add wet mixture to dry and stir well with wood spoon. Refrigerate for 15 minutes.
Place by the tablespoon on a baking sheet lined with Parchment paper. Bake for 10-12 minutes until golden brown. Remove and cool on a wire rack.
Enjoy with a glass of cold Almond Milk.
