Scott Jurek’s vegan eight-grain pancakes have become a staple in our house and a Sunday morning breakfast every week. After reading Eat & Run by Scott Jurek (one of my favorite books of all time), I started making his vegan Eight Grain Strawberry Pancakes. I have yet to eat them after a 20-mile run like he did, but I’ll get there. I did a 1:10:41 run this morning and that was good enough reason to make them again!
Scott Jurek’s Vegan Pancake Recipe
Here is the original recipe from the book:
1/4 cup spelt flour
1/4 cup buckwheat flour
1/4 cup whole wheat flour
1/4 cup oat flour
1/4 cup millet flour
1/4 cup rye flour
1/4 cup barley flour
1/4 cup corn meal
1/4 cup ground flax seed or chia seed
2 teaspoons baking powder
1/2 teaspoon sea salt
2 cups non-dairy milk
3 tablespoons olive oil
2 tablespoons agave nectar or maple syrup
1 tsp vanilla extract
1 1/2 cups frozen or fresh strawberries chopped
1 teaspoon coconut oil
Maple syrup or fruit sauce, for serving
When I make them, I combine all of the flours that I have to make 2 cups, I use 1 tablespoon of chia seeds, almond milk, and as I said, blueberries. I don’t have coconut oil, so I use a canola spray for the skillet. I made sixteen pancakes the size of the ones shown below.
