After reading <a href=\"https:\/\/amzn.to\/496gcIf\" target=\"_blank\" rel=\"noopener noreferrer\"><em>Eat &amp; Run<\/em> by Scott Jurek<\/a> (one of my favorite books of all time), I started making his vegan Eight Grain Strawberry Pancakes. I have yet to eat them after a 20-mile run like he did, but I&#8217;ll get there. \u00a0I did a 1:10:41 run this morning and that was good enough reason to make them again!<\/p>\n<h3>Scott Jurek&#8217;s Vegan Pancake Recipe<\/h3>\n<p>Here is the original recipe from the book:<\/p>\n<p>1\/4 cup spelt flour<br \/>\n1\/4 cup buckwheat flour<br \/>\n1\/4 cup whole wheat flour<br \/>\n1\/4 cup oat flour<br \/>\n1\/4 cup millet flour<br \/>\n1\/4 cup rye flour<br \/>\n1\/4 cup barley flour<br \/>\n1\/4 cup corn meal<br \/>\n1\/4 cup ground flax seed or chia seed<br \/>\n2 teaspoons baking powder<br \/>\n1\/2 teaspoon sea salt<br \/>\n2 cups non-dairy milk<br \/>\n3 tablespoons olive oil<br \/>\n2 tablespoons agave nectar or maple syrup<br \/>\n1 tsp vanilla extract<br \/>\n1 1\/2 cups frozen or fresh strawberries chopped<br \/>\n1 teaspoon coconut oil<br \/>\nMaple syrup or fruit sauce, for serving<\/p>\n<p>When I make them, I combine all of the flours that I have to make 2 cups, I use 1 tablespoon of chia seeds, almond milk, and as I said, blueberries.\u00a0 I don&#8217;t have coconut oil, so I use a canola spray for the skillet.\u00a0 I made sixteen pancakes the size of the ones shown below.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-3951 size-large\" src=\"https:\/\/howtobefit.com\/coach-blog\/wp-content\/uploads\/2017\/01\/8-grain-scott-jurek-pancakes-strawberry-and-blueberry-1024x1004-1-1024x1004.jpg\" alt=\"Scott Jurek's 8 Grain Strawberry Pancakes With Blueberries\" width=\"1024\" height=\"1004\" srcset=\"https:\/\/howtobefit.com\/coach-blog\/wp-content\/uploads\/2017\/01\/8-grain-scott-jurek-pancakes-strawberry-and-blueberry-1024x1004-1.jpg 1024w, https:\/\/howtobefit.com\/coach-blog\/wp-content\/uploads\/2017\/01\/8-grain-scott-jurek-pancakes-strawberry-and-blueberry-1024x1004-1-300x294.jpg 300w, https:\/\/howtobefit.com\/coach-blog\/wp-content\/uploads\/2017\/01\/8-grain-scott-jurek-pancakes-strawberry-and-blueberry-1024x1004-1-768x753.jpg 768w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\" \/><\/p>\n<div id=\"attachment_549\" class=\"wp-caption aligncenter\"><\/div>\n<div class=\"sharedaddy sd-sharing-enabled\">\n<div class=\"robots-nocontent sd-block sd-social sd-social-icon-text sd-sharing\">\n<h3 class=\"sd-title\">Share this:<\/h3>\n<div class=\"sd-content\"><\/div>\n<\/div>\n<\/div>\n<div style=\"margin-top: 0px; margin-bottom: 0px;\" class=\"sharethis-inline-share-buttons\" ><\/div>","protected":false},"excerpt":{"rendered":"<p>Scott Jurek&#8217;s vegan eight-grain pancakes have become a staple in our house and a Sunday morning breakfast every week.
