{"id":1828,"date":"2011-04-19T11:25:21","date_gmt":"2011-04-19T18:25:21","guid":{"rendered":"http:\/\/howtobefit.com\/coach-blog\/?p=1828"},"modified":"2019-09-05T14:50:43","modified_gmt":"2019-09-05T21:50:43","slug":"my-p90x-chicken-scramble-with-spinach","status":"publish","type":"post","link":"https:\/\/howtobefit.com\/coach-blog\/2011\/04\/19\/my-p90x-chicken-scramble-with-spinach\/","title":{"rendered":"My P90X Chicken Scramble with Spinach"},"content":{"rendered":"<div style=\"margin-top: 0px; margin-bottom: 0px;\" class=\"sharethis-inline-share-buttons\" ><\/div><div id=\"post-body-4370886350700712152\">I love using the <a href=\"http:\/\/teambeachbody.com\/shop\/-\/shopping\/P90X?referringRepId=37971\">P90X<\/a> Nutrition Guide and the <a href=\"http:\/\/teambeachbody.com\/shop\/-\/shopping\/Insanity?referringRepId=37971\">Insanity<\/a> Elite Nutrition guide for recipes. \u00a0 Since I love to cook, I often make my own versions of the recipes.<\/p>\n<p>Last night we had breakfast for dinner. \u00a0 The night before I had made a salad with cubed chicken and I had some left over. \u00a0 The kids really look forward to my homemade, whole wheat pancakes and scrambled eggs. \u00a0 My husband and I wanted to something a little more grown up. \u00a0 Enter the Chicken Scramble with Spinach!<\/p>\n<p>I used whole eggs instead of egg whites. \u00a0 I was short on eggs and it would have been a pretty skimpy dinner if I didn&#8217;t use the whole egg. \u00a0 I also omitted the Parmesan cheese and basil that the original P90X version calls for.<\/p>\n<p>I served it up with a side of fresh strawberries.<\/p>\n<div><a href=\"http:\/\/1.bp.blogspot.com\/-QbpN8hSqnWk\/TZTds9b4BWI\/AAAAAAAAAKU\/6Nfju8ngpDY\/s1600\/eggs+wtih+spinach.jpg\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/1.bp.blogspot.com\/-QbpN8hSqnWk\/TZTds9b4BWI\/AAAAAAAAAKU\/6Nfju8ngpDY\/s200\/eggs+wtih+spinach.jpg\" border=\"0\" alt=\"\" width=\"200\" height=\"200\" \/><\/a><\/div>\n<p><strong>My P90X Chicken Scramble with Spinach<\/strong><\/p>\n<p>This recipe is for 2 people<\/p>\n<p>6 whole eggs (or 12 egg whites)<br \/>\n2 cups of baby spinach<br \/>\n2 TBS finely chopped onion<br \/>\n6 \u00a0oz of cooked, cubed chicken<\/p>\n<p>Cook spinach and onions in large non-stick skillet in 1 tsp of olive oil over medium heat. Toss in chicken. \u00a0 Once spinach is soft and wilted, remove from pan and place on plate.<\/p>\n<p>Cook eggs over medium heat until halfway set. \u00a0 Add the spinach, chicken and onion to eggs and cook through.
